These are the ABSOLUTE best meatballs. I mean, anything that's stuffed with a mozzarella ball has to be good, right?! It really does take a meatball to the next level. We highly recommend giving this recipe a try.
| TURKEY MEATBALLS STUFFED WITH MOZZARELLA SERVED OVER BAKED SPAGHETTI SQUASH |
Ingredients
- 1 pound ground beef or turkey
- 1/2 cup grated parmesan
- 1/3 cup panko breadcrumbs
- 2 eggs
- 1/2 teaspoon salt
- 1/2 teaspoon freshly cracked black pepper
- 1 teaspoon oregano
- 1 teaspoon basil
- mozzarella balls
- 1/2 cups flour
- 1/2 cup olive oil
- 1 jar tomato sauce
Directions
- Preheat oven to 350℉.
- In a large mixing bowl combine the ground meat, parmesan, panko breadcrumbs, eggs, salt, pepper, oregano, & basil. Combine everything until the ingredients are evenly mixed.
- Form the ground meat mixture into small meatballs, each about he size of a golf ball.
- Insert a small mozzarella ball in the center of each meatball & reform the meatball around the cheese. The mozzarella should be completely hidden from sight.
- Dredge each meatball in the flour to lightly coat it and gently tap off any excess.
- Preheat the oven to 350 degrees F.
- Heat the olive oil in a large skillet over medium high heat. Once the oil is hot, add half of the meatballs and sauté for a 4-5 minutes, turning every so often to brown the outside.
- Once the meatballs are browned, remove them from the oil and repeat the process with the remaining meatballs.
- Pour the tomato sauce into a baking dish and place the browned meatballs on top.
- Place in preheated oven and let the meatballs continue to bake for 15-20 minutes until cooked through.
Great served over pasta or spaghetti squash and garnished with fresh basil and grated parmesan.
