HOMEMADE WAFFLES



So we may not be whipping up a batch of homemade waffles all the time but when we do, these are super easy and delicious. They also freeze really well so we like to have a batch in the freezer for a quick breakfast. Just preheat the oven to 350° and throw in a frozen waffle until warm, usually takes about 3-4 minutes. We also have the best mini waffle maker which can be found on Amazon (click here). We love that it's super small and hardly takes up any space.

Ingredients
  • 2 eggs
  • 1 3/4 cup milk
  • 1/4 cup butter, melted
  • 1 tablespoon honey
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 1 1/2 cup all purpose flour
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • Pure Maple Syrup & Fruit, for serving


Instructions
  1. Preheat waffle iron.
  2. In a large mixing bowl whisk together the eggs, milk, butter, honey, cinnamon, & baking soda until well combined.
  3. Add in the flour, baking powder, and salt. Whisk together just until large lumps disappear.  
  4. Once the waffle iron is hot, ladle some batter onto the center of the iron. Each waffle iron cook time will vary.  We use a mini waffle maker and it takes exactly 4 minutes to cook each waffle. 
  5. Keep waffles warm until you finish cooking the batch.  Top with pure maple syrup & fruit.

AMAZING OATMEAL COCONUT COOKIES

The Oatmeal Coconut Cookie is soft, chewy and delicious! Every time a tray of these cookies have been taken anywhere they instantly become the hit of the party. Out of any dessert we have ever made, these cookies have been the most popular. This recipe is SO simple and easy! It seriously takes minutes to mix all the ingredients together, you only need one bowl, and it takes exactly eight minutes to cook each batch. There is just something about the coconut and oatmeal combination that is so good. 

Oatmeal Coconut Cookie Recipe

Ingredients
  • 1 cup butter, slightly softened
  • 1 1/4 cup packed brown sugar
  • 3/4 cup sugar
  • 2 tsp vanilla extract
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 1/4 cups all purpose flour
  • 1 cup quick cooking oats
  • 1 1/2 cup shredded sweetened coconut

Instructions
  1. Preheat oven to 350°. Cream together butter and sugars, until they are well-combined.
  2. Add the eggs and vanilla, mix until fully incorporated. 
  3. Add baking soda, baking powder, and salt to the wet mixture. Mix until well-distributed.
  4. Add about 1/2 of the flour, and mix until the flour is JUST incorporated. Scrape down the sides of your bowl, and then add the second half of your flour, mixing until JUST incorporated. You don’t want to over mix here or you will end up with tough cookies.
  5. Add oats and coconut, mixing until they are JUST incorporated.
  6. Use a cookie scoop to evenly portion out the dough. If you are rolling the dough by hand, you will want a ball that is a little over an inch in diameter.
  7. Place on a baking sheet leaving about 2″ between each cookie. Bake for EXACTLY 8 MINUTES. Trust us! They will not look like they are done but once cooled this will result in the perfect chewy cookie.
  8. Let the cookies cool on the baking sheet for a few minutes, then move them to a cooling rack.

BEST PUMPKIN MUFFINS

As soon as we see the first signs of fall we dream of warm, delicious Pumpkin Muffins. Although, these are so good that sometimes they are made in the middle of summer. Over the past few years this has been a go to recipe for Pumpkin Muffins. Occasionally a tempting new recipe on Pinterest will lure us in, but they are just never as good. Our kids love muffins for breakfast and on a typical rushed morning it's nice having a batch of these on hand. So, if you are looking for an easy, tried and true Pumpkin Muffin Recipe....then this one is for you! 

Pumpkin Muffin Recipe

 Ingredients
  • 1 3/4 cups all purpose flour
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 2 eggs
  • 1 15 ounce can pure pumpkin puree (*not pumpkin pie filling*)
  • 1 teaspoon vanilla extract
  • 1/2 cup melted butter

Instructions
  1. Preheat oven to 375° and line a standard size muffin pan with liners.
  2. Measure out the flour, sugars, baking soda, salt and spices in a medium bowl and whisk together. Set aside.
  3. In another bowl, whisk together the eggs, pumpkin puree, vanilla and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir. Make sure to not over mix. Just stir until everything is incorporated into the batter.
  5. Next evenly distribute the batter into the muffin tin.  It's helpful to use a large ice cream scoop for this process. They will be nearly full which will result in a nice puffy muffin top.
  6. This step is optional - top with chopped pecans and a little sprinkle of sugar. 
  7. Bake muffins for 20-22 minutes or until a toothpick inserted into the center of the muffins comes out clean.

FALLING FOR BLUSH

Fall is here but in the South it still feels like summer. We are so ready to dress for the season. While it continues to be hot outside during the day, it tends to cool off in the evening, so its all about the layers. One of our favorite colors for fall is blush. Jordan layered this gorgeous fall sweater (a must have under $40) with her favorite blush leather jacket and we are loving the tone on tone. Pair with white jeans in the fall and blue or black jeans in the winter. Another great wardrobe staple are the white booties (under $35) that transition well into fall and pair well with both casual and dressy.

JORDASH - ABOUT US

JordAsh came about as a creative outlet for two friends and former neighbors who were born exactly one month apart in the 80's. In our early years we started our search for the perfect pair of jeans when we were introduced to iconic brands like Jordache and Guess. We have been looking ever since and can't wait to share that, and all the other pretty finds with you. JordAsh is a lifestyle blog that focuses on fashion, interior design, recipes, makeup & travel. Combining our talents, backgrounds, and passions we feel that it is time to make JordAsh a reality. We are so excited to share this journey with you!

Jordan grew up in Charleston, SC and worked in retail as soon as she was old enough to be employed. She has always loved fashion, makeup and sales. She attended the University of Georgia and graduated with a degree in Public Relations. After graduation she started a job in pharmaceutical sales and now works as a Cardiovascular Specialty Rep in Raleigh, North Carolina. She has been married for 10 years and has two children, Bram (6 years) and Connell (3 years).


"Ash"
Ashley grew up in a small town in eastern North Carolina. From a young age she had a passion for creating pretty spaces. She attended Appalachian State University and graduated with a Degree in Interior Design. After college she moved to Raleigh, North Carolina to begin her career as an Interior Designer which she pursued until deciding to be a Stay at Home Mom. She has been married for 6 years and has two children, Liam (3 years) and Lanier (1 year).
