EASY "CUP OF" PEACH COBBLER

Honestly, I'm typically not a big fan of most cobblers. However, I could easily eat the entire dish of this recipe. Crisp on the outside and cakey on the inside...It's SO good! Growing up, my grandmother & mom only made cobbler this way and they called it the "cup of cobbler". It's the easiest recipe to make and remember because its just a cup of each ingredient. You only need 5 simple ingredients that you probably have on hand. You can use any fruit you prefer and it can be canned, frozen or fresh.  This cobbler is definitely more cake like, which is why I like it so much. Serve warm with vanilla ice-cream or eat cold leftovers straight out of the fridge. I do both and its delicious either way.



Ingredients
  • 1 cup fruit (my favorites are peaches or blueberries)
  • 1 stick butter
  • 1 cup self rising flour
  • 1 cup sugar
  • 1 cup milk

Directions
  • Preheat oven to 350℉, melt butter in baking dish while preheating
  • Mix flour, sugar & milk together
  • Once butter is melted, pour the mixture on top (do not stir)
  • Evenly place fruit on top
  • Bake for 30-40 mins, until crust is golden brown
*Optional - If using peaches sprinkle a little brown sugar & cinnamon on top before baking.

FRIDAY FINDS - SPRING SHOES

We both have a total love for shoes and can't wait for the day when we will put on actual clothes and cute shoes and go out in society again. We can't get over how weird of a time this is, but we are going to enjoy this time with our family.....and enjoy some of the great sales going on right now. We could definitely use a little retail therapy. Here are some of the spring shoes we are loving and a few are currently on sale. Also, check out the big Loeffler Randall Sale that started today. This never happens so things will go fast.

SLOW COOKER CHICKEN TACO SOUP

I have been all about easy dinners lately. I often turn to my slow cooker to get healthy dinners on the table fast. This recipe is seriously so simple to prepare (less than 10 minutes) and it's really good. We have been having actual winter like weather this week, so meals in the slow cooker will be on repeat.


Ingredients

  • 1 cup mild salsa
  • 15 ounce can black beans, rinsed & drained
  • 15 ounce can pinto beans, rinsed & drained
  • 15 ounce can corn, drained
  • 15 ounce can diced tomatoes
  • 3 tablespoons taco seasoning 
  • 2 cups chicken broth
  • 1 pound skinless chicken breasts
  • Optional Toppings: sour cream, hot sauce, grated cheese, avocado, green onions, cilantro, tortilla chips

Directions
  1. Place salsa, black beans, pinto beans, corn, diced tomatoes, taco seasoning, and chicken broth in slow cooker. Stir to combine. Place chicken into the slow cooker so that it’s completely covered by the liquid and other ingredients.
  2. Cover and cook on low for 6 hours. Remove chicken and shred. Stir chicken back into the soup.
  3. Serve with your favorite toppings.
This is the Slow Cooker I have and I LOVE it!
