Ingredients
- 1 cup mild salsa
- 15 ounce can black beans, rinsed & drained
- 15 ounce can pinto beans, rinsed & drained
- 15 ounce can corn, drained
- 15 ounce can diced tomatoes
- 3 tablespoons taco seasoning
- 2 cups chicken broth
- 1 pound skinless chicken breasts
- Optional Toppings: sour cream, hot sauce, grated cheese, avocado, green onions, cilantro, tortilla chips
Directions
- Place salsa, black beans, pinto beans, corn, diced tomatoes, taco seasoning, and chicken broth in slow cooker. Stir to combine. Place chicken into the slow cooker so that it’s completely covered by the liquid and other ingredients.
- Cover and cook on low for 6 hours. Remove chicken and shred. Stir chicken back into the soup.
- Serve with your favorite toppings.
