EASY MEXICAN QUINOA

This one pan recipe is easy to make, healthy, & delish. This dish takes less than five minutes to prepare and requires very little cooking skills. You can play around with this recipe and add whatever mexican inspired ingredients you like to the quinoa before cooking. It's also makes great leftovers, served either cold or warm.

Ingredients
  • 1 cup quinoa 
  • 2 cups water
  • 15 oz can black beans, drained & rinsed
  • 15 oz can corn, drained (or 1 1/2 cups frozen corn)
  • 1 cup salsa 
  • Spices to taste: I use the Trader Joe's Chili Lime Seasoning Blend, garlic powder, salt, & pepper. (In place of the Chili Lime Seasoning you could use chili powder)
  • Topping Options: avocado, chopped green onions, chopped greens, cilantro, grated cheese, chicken, shrimp, sour cream, hot sauce.


Directions
  1. Add quinoa, water, black beans, corn, salsa & spices to a medium saucepan. 
  2. Bring to a boil, stir, cover with lid, and reduce heat to simmer on low for 15-20 minutes (or until quinoa is done and most of the liquid is absorbed)
  3. Spoon onto plate and add your toppings of choice.
