WHOLESOME BANANA OATMEAL MUFFINS
These muffins are the best of the best and they don't contain flour, refined sugar, oil, or dairy! They are seriously SO EASY to make. All you need are 5 simple ingredients and a food processor or blender. My entire family loves them and I have made them at least 100 times. Not at all necessary, but I do usually add the optional chocolate chips. I know that cancels out the no refined sugar part, but it's so worth it. I have tried many healthy whole food muffin recipes over the years and nothing beats these. The next time you have some ripe bananas laying around definitely make this recipe. It will not disappoint!
Ingredients
- 2 cups old fashioned rolled
- 4 ripe bananas
- 2 eggs
- 1 cup pitted whole dates
- 1 teaspoon baking soda
- optional - raisins, nuts, berries or chocolate chips
Directions
- Preheat oven to 350°.
- Grease or line muffin tin.
- Mix all ingredients in a food processor or blender until smooth.
- Stir in optional raisins, berries or chocolate chips.
- Scoop batter into muffin tin. You should have enough for 10-12 standard size muffins.
- Top with optional nuts (I prefer chopped pecans)
- Bake for 20-25 minutes.
